Oat-Bran Apple Muffins (Kathi Hill)
¾ c. oat bran; ½ c. whole wheat flour ½ c. whole bran cereal; ¼ c. packed brown sugar 2½ t. baking powder; ½ t. cinnamon ¼ t. salt; 1 beaten egg ¾ c. skim milk; 3 T. cooking oil 1 sm. apple, finely chopped (abt. ½ c.) ½ c. raisins Topping: 2 T. sugar; 1 T. flour; 1 t. melted margarine; ¼ t. cinnamon Bake @ 400° for 12-15 minutes. |
