Carrot Bread (Carol Miles)

Combine: 2 c. flour; 2 t. soda; 2 t. cinnamon; ½ t. salt; 1½ c. sugar; ½ c. raisins; ½ c. coconut; ½ c. chopped pecans; 1 c. vegetable oil; 2 t. vanilla; 2 c. grated carrots; 3 eggs

Mix together dry ingredients. Add raisins, coconut & nuts. Add remaining ingredients and mix well. Pour into greased pans. Let stand 20 minutes.

Bake @ 350° for 1 hour. Cool. Refrigerate or freeze.
