Crepes (Relief Society)
Mix together in blender: 2 eggs; 1 c. milk; ½ t. salt; 1 c. flour; 2 T. melted butter. Cover & let stand for at least 30 minutes.
Heat a 7" skillet until moderately hot, film it with oil.
Using a ¼ c. measure drop in several tablespoons of batter. Cook for a few minutes until bottom is lightly browned and edges lift easily from pan. Flip crepe over and cook on 2nd side for a few more minutes. It will not brown as evenly as the other side. This will be the inside of the crepe. Continue with rest of batter. If batter gets too thick towards end, add a little milk.
