Sopapillas (Kathi Hill)

Dissolve: 1 pkg. yeast; 1/8 t. ginger; 1 t. mace; ¼ c. warm water. Set aside.

Bring to scald: 1 c. water; ¼ c. shortening; 1 t. salt; ¼ c. sugar. Cool. Add: 1½ c. flour. Beat in: 1 egg. Add: Yeast Mixture. Add: 2 c. flour.

Let rest 10-15 minutes. Roll out on floured surface (1/4 inch). Drop into hot frying oil. Dust with powdered sugar or cinnamon-sugar mixture.
