Spudcloud Donuts (Kathi Hill)
Mix & let stand in warm place 30 minutes or until slightly foamy: c. mashed potatoes; c. sugar; 1 pkg. yeast; 1 t. salt; t. baking powder; t. baking soda; c. milk; c. cooking oil; 1 t. vanilla.
Add: 1 well-beaten egg; 2 - 2 c. flour.
Make into soft dough. Knead on floured surface until smooth (about 5 minutes). Place in greased bowl (turn once to grease surface). Let rise about 45 minutes. Roll out. Cut. Let rise 30 minutes. Fry in deep fat. While still warm roll in c. sugar and t. cinnamon.
