Spudcloud Donuts (Kathi Hill)
Mix & let stand in warm place 30 minutes or until slightly foamy: ½ c. mashed potatoes; ¼ c. sugar; 1 pkg. yeast; 1 t. salt; ¼ t. baking powder; ¼ t. baking soda; ¾ c. milk; ¼ c. cooking oil; 1 t. vanilla.
Add: 1 well-beaten egg; 2½ - 2¾ c. flour.
Make into soft dough. Knead on floured surface until smooth (about 5 minutes). Place in greased bowl (turn once to grease surface). Let rise about 45 minutes. Roll out. Cut. Let rise 30 minutes. Fry in deep fat. While still warm roll in ½ c. sugar and ¼ t. cinnamon.
