Strawberry Bread (Kathi Hill)

2 10 oz. pkgs. frozen strawberries, thawed; 3 c. flour; 1 t. baking soda; 1 t. cinnamon; 1¾ c. sugar; 1 t. salt; 1¼ c. vegetable oil; 4 eggs, well-beaten; 1 c. chopped walnuts or pecans (optional). (Reserve ½ c. juice from strawberries. Mix with 8 oz. soft cream cheese for a spread if desired.) Mix all dry ingredients. Make a well and put in strawberries, vegetable oil and eggs. Stir by hand until all ingredients are combined. Stir in chopped nuts. Pour into 2 greased and floured loaf pans. Bake @ 350° for 50-60 minutes.
