Favorite Waffles (Karen Burbidge)
2 eggs (separated), 1½ c. milk, ½ c. vegetable oil, 1¾ c. flour, 1 T. baking powder, 1 T. sugar, 1 t. salt
In small bowl beat egg whites until stiff but not dry. Set aside. In medium size bowl beat egg yolks until thick and lemony colored. Continue beating as you add milk and oil. Add dry ingredients, beating only until smooth. Fold in egg whites. Add ½ c. batter to preheated waffle baker until light goes out.
