Yeast Doughnuts (Karen Burbidge)

2 c. warm water, 3 T. yeast, c. oil, 3 beaten eggs, 1 t. lemon extract, 2/3 c. sugar, 1 t. salt, 7 c. flour, 1 t. baking powder, t. cream of tartar

Let rise in warm place for 45 minutes.
Knead down & return to floured board.
Roll " thick & cut with doughnut cutter.
Heat oil to 375. Fry quickly.
Drain on paper towels.
Cool slightly & frost.
