Zucchini Nut Bread (Kathi Hill) (Makes 2 loaves)
Beat: 3 eggs. Add: 1 c. oil; 2 c. sugar; 2 c. grated zucchini. Add: 3 t. vanilla, 1 t. almond extract; ½ t. lemon extract. Add: 3 c. flour; 1 t. baking soda; 1 t. salt; 2-3 t. cinnamon; 1 t. nutmeg; ¼ t. baking powder. Add: 1 c. chopped nuts Spread into greased baking pans. Bake @ 350° for 1 hour. |
