Oatmeal Cake (Lynda Speidel)
Pour 1¼ c. boiling water over 1 c. quick-cooking oatmeal. Stir and let stand 20 minutes.

Cream together: 1 c. light brown sugar; 1 c. white sugar; Scant ½ c. shortening; 2 eggs; 1 t. vanilla.
Sift together: 1 1/3 c. flour; ½ t. salt; ½ t. cinnamon; 1 scant t. soda.

Add oatmeal mixture to creamed mixture. Then add flour mixture. Pour into greased pan. Bake @350° for 30-35 minutes. (See Oatmeal Cake Frosting)
