Pineapple Snowballs (Phyllis Brown)

Make filling: 1 c. sugar + 1 sq. butter - cream together

Add: 2 egg yolks. Mix well. Add: 1 c. crushed pineapple, drained well. Several chopped maraschino cherries. 1 c. chopped nuts (pecans. Mix well and set aside.

Layer 3 vanilla wafers with filling in-between on cookie sheets. Let these cakes set in refrigerator overnight. Next day ice with 1½ pints whipping cream (prepared) and cover with 1 large bag coconut.
