Pineapple Cake (Kathi Hill)
1/3 c. margarine; 1 c. sugar; 3 eggs, well-beaten; 1½ c. flour; 2 t. baking powder; 1/8 t. soda; 1 c. grated or crushed pineapple, drained
Cream shortening. Add sugar & eggs gradually. Mix & sift dry ingredients. Add to first mixture alternately with pineapple. Bake @ 325° for 40 minutes.
