Pumpkin Roll (Becky Essig)

Batter: 3 eggs - beat 5 minutes. 1 c. sugar - beat. 2/3 c. pumpkin & 1 t. lemon juice.

Pastry roll: ¾ c. sugar; 1 t. baking powder; 2 t. cinnamon; 1 t. ginger; ½ t. nutmeg; ½ t. salt; 1 c. chopped nuts.

Grease & flour cookie sheet. Pour batter with 1 c. chopped nuts onto pastry roll. Roll jelly-roll fashion, slice. Bake @ 375° for 15 minutes.
