Chicken Casserole (Karen Burbidge)
Butter pan & put on bottom: 9 slices bread, cubed (no crusts).
Layer: 4-5 c. diced cooked chicken, 1-4 oz. can sliced mushrooms, 1 8 oz. can water chestnuts drained and sliced, ½ lb. grated cheddar cheese. Dot with: ½ c. margarine.
Mix & pour over top: 4 eggs beaten well, 2 c. milk, 1 t. salt, 1 can cream of mushroom soup, 1 can cream of celery soup, 1 2 oz. jar pimentos
Add on top: coarse buttered bread crumbs. Bake @ 350° for 1 hour 15 minutes. Sprinkle with paprika.
