Lemon Chicken & Vegetables (Kathi Hill)

Stir fry in 1½ T. vegetable oil for 2 minutes or until lightly browned: 4 chicken breasts, skinned, boned, cut into pieces; 1 lemon sliced.

Stir fry in 1½ T. vegetable oil for 2 minutes: ½ c. sliced celery; ½ medium onion, sliced; 1 c. sliced yellow squash or zucchini; ½ c. sliced mushrooms; ½ c. red pepper strips.
Combine and add: ½ c. frozen green peas, thawed; ½ c. snow peas; 1 t. pepper; 1 T. lemon juice. Serve immediately.
