Lemon Chicken & Vegetables (Kathi Hill)

Stir fry in 1 T. vegetable oil for 2 minutes or until lightly browned: 4 chicken breasts, skinned, boned, cut into pieces; 1 lemon sliced.

Stir fry in 1 T. vegetable oil for 2 minutes: c. sliced celery; medium onion, sliced; 1 c. sliced yellow squash or zucchini; c. sliced mushrooms; c. red pepper strips.
Combine and add: c. frozen green peas, thawed; c. snow peas; 1 t. pepper; 1 T. lemon juice. Serve immediately.
