Lemon Fried Chicken (Kathi Hill)
½ c. flour
Salt and pepper
2 whole chicken breasts, skinned, boned, cut into 1" cubes 1/3 c. butter or margarine
2/3 c. lemon juice
2 c. hot cooked rice

Roll chicken in flour, salt and pepper. Fry in melted butter for 3-5 minutes. Sprinkle lemon juice evenly over chicken. Stir until steam from lemon juice evaporates. Serve immediately with cooked rice.
