Lemon Squares (Karen Burbidge)

Mix: 1 c. flour, ½ c. butter, ¼ c. sugar. Blend until smooth. Press into 11X7X1.5" pan and bake @ 325° for 20 minutes or until brown.

Filling: 1 c. sugar, 2 eggs lightly beaten, 1 t. lemon rind, 3 T. lemon juice, ¼ t. salt, 2 T. flour & ½ t. baking soda
Combine, beat, blend and spread over hot crust. Return to oven and bake for 25 minutes. Remove and cool. Cut into squares. Sprinkle with powdered sugar.
