Lemon Squares (Kathi Hill)
1 c. flour; ½ c. margarine, softened; ¼ c. powdered sugar; 2 eggs; 1 c. sugar; ½ t. baking powder; ¼ t. salt; 2 t. grated lemon peel (optional); 2 T. lemon juice.

Heat oven to 350°. Mix flour, margarine and powdered sugar. Press into ungreased square pan, building up ½' edges. Bake 20 minutes.

Beat remaining ingredients till light and fluffy, about 3 minutes. Pour over hot crust. Bake till no indentation remains when touched lightly in center, about 25 minutes. Cool. Cut into squares.
