Apple Pie Filling (Heather Hill)
Combine in a large kettle: 4 c. sugar, 1 t. nutmeg, 1 t. salt, 1 c. cornstarch, 3 t. cinnamon.
Add 10 c. water. Cook until thickened and add: 3 T. lemon juice.
Fill canning jars 1/3 full of sauce. Peel and slice apples into jars, pushing fruit down until jars are filled. Close jars with HOT lids and process in boiling water bath for 20 minutes. Yields 7 quart jars.
