Pietro's Barbecued Salmon (Karen Burbidge)
Stir in skillet till butter melts: 1 T. butter, 1 T. honey, 1T. brown sugar. Remove from heat & add: 2 T. soy sauce, 3 T. Dijon mustard, 1 T. olive oil, 1 t. minced ginger or garlic, whole cloves. Rinse & pat dry: 1 salmon fillet w/skin. Place skin side down on large piece of aluminum foil and fold under. Set fish in rimmed pan and spoon sauce evenly over fish. Let fish stand 1 hr., basting with sauce frequently. Put salmon with foil on a grill over indirect heat. Cover with lid, opening any vents and cook until fish is opaque but still moist-looking in the thickest part, 20-30 min. Squeeze juice from lime wedges onto fish and garnish with lime slices.
