Guido's Killer Chili (Karen Burbidge)

1 lb. Italian sausage; cooked and drained.
Add: ½ c. olive oil, 1 diced green pepper, 1 diced yellow onion, 2 t. minced garlic, 1 diced eggplant, 1 medium diced zucchini, 1 T. oregano, 1 T. basil, 2 T. crushed red pepper, ½ t. fennel seed, bruised. Cook until onions become translucent.
Add: 4 oz. tomato paste, 1 qt. spaghetti sauce, 8 oz. tomato sauce, 2 cans drained kidney beans, 1 can black olives, 2 c. water Cook for 45 minutes. Garnish with parmesan or mozzarella cheese.
