Minestrone Main-Dish Soup (N.C. Relief Society)
3 slices bacon - finely chopped; ½ c. chopped celery; ½ t. garlic salt; ¼ t. salt; 1 t. crushed basil leaves; ½ t. Italian seasoning; ¼ t. chopped chives; 1 can beef broth soup; 1 can bean with bacon soup; 1 can (16 oz.) tomatoes; 1½ cans of water; 2/3 c. uncooked ditalini; 1 c. cabbage - thin shredded; 1 c. cubed zucchini
Brown bacon. Cook onions & celery in bacon grease until tender. Stir in soups, water, tomatoes, ditalini & seasonings. Bring to boil & simmer 15 minutes. Add cabbage & zucchini. Cook ten minutes more until done. Stir occasionally.
