Dom Deluise Potato Rice Soup (Heather Hill)
1 garlic clove, 4 T. olive oil, 1 medium chopped onion, 1 medium peeled & diced potato, 1 c. Italian rice, 2 c. chicken broth, 2 c. water, T. fresh chopped parsley, 1 T. grated Parmesan cheese
Gently sauté garlic clove in oil until golden brown. Add onion, potato, rice, broth, water and parsley. Stir, bring to a boil and let simmer for 1 hour stirring occasionally. Just before serving stir in the grated cheese. Important: This is best served immediately with additional cheese sprinkled on top of each serving. Serves 6 to 8.
