Lemon Basil Herbed Rice (Kathi Hill)
2 T. unsalted butter; 3 T. finely chopped onion; 1 c. uncooked long-grain rice; ¼ c. chopped fresh lemon basil; 1 sm. bay leaf; 1 T. fresh parsley; several drops hot pepper sauce; 2½ c. chicken stock; salt and pepper to taste.
Heat oven to 400°. Melt butter. Stir in onions, add rice. Cook constantly 3 minutes. Stir in rest of ingredients. Bake for 20-25, till rice is tender. Remove bay leaf.
