Squash Casserole (N.C. Relief Society)

2 lbs. squash (5-6 medium); 1 carrot, grated; 1 med. onion, chopped; 2 T. chopped pimentos; 1 can cream of chicken soup; 1 pkg. Pepperidge Farm stuffing mix; 1 stick margarine
Cook squash till tender. Drain & mash. Add remaining ingredients except stuffing & butter. Melt margarine. Pour over stuffing & mix. Add half of stuffing mix to squash mixture. Mix and put into casserole dish. Top with remaining stuffing mix. Bake @ 350° for 25 minutes.
